“Coconut” Pound Cake
This southern take on Auntie Kim’s Pound Cake is sure to please! It’s a Coconut Pound Cake topped with Vanilla Bean Icing and Coconut Flakes! Delicious!
Comes as a whole pound cake and is 10″ in diameter. Serves 10-12

You can store pound cake on the counter at room temperature in an airtight container. It will last anywhere from 3 to 4 days at room temperature. To maximize shelf life you can put it in the refrigerator to get a few extra days of freshness. Properly stored, it will last a week in the refrigerator
Pound cake is perfect for freezing. I usually cut it in slices and wrap individually so I can thaw a slice whenever I want. Wrap it up tightly with aluminum foil or plastic freezer wrap and store it in the freezer for 4 to 6 months. To thaw, sit out at room temperature for 1-2 hours. Best served warmed in the microwave for 10 seconds.
